Instructions

Step 1
Preheat oven to high broil
Step 2
Combine tuna, shallot, mayo, lemon juice, parsley, salt and Sriracha in a small bowl. Place mixture evenly on top of muffins, leaving it open-faced. Top each muffin with one tomato slice, black pepper and 2 Tbsp cheddar cheese.
Step 3
Place muffins on a baking sheet and broil for 3-5 minutes. Enjoy warm - 2 per serving.
