Simple but delicious chicken risotto

Just a simple ol’ risotto, nothing more, nothing less. Great for those days you want to make something (good) out of (almost) nothing…
It’s still amazing to me how something so clean and simple, and only by using the good technique, can be made to taste soooo good!
I can honestly say this is one of my favorites.

Step 1
Bring the stock to a boil in a separate bowl and keep it warm on the stove during the whole process of making a risotto.

I like to use a big, deep pan for the risotto, but any pot will do, just try to find one with a bigger diameter.
Saute the onions on medium heat few minutes.

Add the chicken breast cut into smaller cubes. Season with paprika, salt and pepper. Be gentle, since we will be adding a lot of stock and parmesan later which will add to the saltiness of the dish.
NOTE: You can add more chicken if you wish, but I prefer to keep it moderate, and not to let it take over the whole thing - the rice should remain the star of the dish!

Once the chicken gets some colour add washed rice and saute for a few minutes. Add the herbs.

Add the wine, wait till the alcohol evaporates and the liquid reduces.

Start adding the stock, 1 ladle at a time. Don't add too much at once, just enough to keep the rice cooking in some juices. Stay close. Once the stock reduces add some more. The amount of stock is set for the general orientation - it may vary depending on the rice and your personal preference, so if you feel like the rice is cooked enough, don't use the whole lot. I like to keep it al dente, though.
NOTE: When you feel it's almost there - stop cooking it! There are a few more steps and the rice will continue cooking and soaking up the juices, so keep it just a little under and leave slightly more stock in. You'll thank me later. =)

Taste and adjust the seasoning. When you're satisfied - grate the parmesan in, add the butter in and mix gently.
I usually go with the flow and grate parmesan directly in and see how it tastes and than (usually) add some more... #parmesanLover

Serve with some freshly shredded parmesan and enjoy with a glass of good wine.
