Filling
500 gramscream cheese
1tin sweetened condensed milk
1 teaspoonvanilla
2 tablespoonlemon juice
10 gramsgelatine powder
dissolved in 60 ml hot water

Step 1
Combine crushed biscuits with melted butter and press into a greased and lined 20cm springform tin.
Filling
Step 2
In a mixing bowl gently beat cream cheese, condensed milk and vanilla until the mixture becomes smooth, then add lemon juice and mix.
Step 3
Sprinkle the gelatine over the hot water and mix well until the gelatine is totally dissolved, then add to the cream mixture while constantly mixing to ensure it is fully incorporated. Pour mixture over the base and allow to set in the refrigerator for at least 3 hours.
Topping
Step 4
Combine all ingredients in a small saucepan over medium heat for about 6 minutes until the curd surface will hold whisk marks. Do not boil. Pour over cheesecake.
