Instructions
Step 1
Salt a water and bring to a boil. Cook elbow pasta for like 2/3rd to 3/4th the usual time — going for very al dente — and set aside.
Step 2
Make a light roux by melting the butter and then adding flour slowly while stirring constantly.
Step 3
Slowly mix in a handful of shredded cheese alongside the milk and half and half to make the sauce, saving some (1-2 cups?) cheese for topping
Step 4
Combine elbows and cheese sauce, mixing well. Pour into oven-safe dish, adding some cheese to the middle and top.
Step 5
Bake at 325-350° for ~30min and finish on broil for a few minutes.
