Instructions
Step 1
Begin with peeling and slicing the potatoes into fries.
Step 2
Put onto boil and leave to simmer for 8-10 minutes until they're almost falling apart.
Step 3
Drain, place on a wire rack and put in the fridge.
Step 4
Finely chop the garlic and shallots.
Step 5
Get a sauce pan on a medium-high heat and add the butter. Once it's melted, add the shallots and garlic. Cook for 1 minute until softened.
Step 6
Add the flour and stir well. Keep stirring for 3-5 minutes until the flour turns a nutty brown (be careful not to burn - dark brown). Then slowly add the beer and keep stirring.
Step 7
Then add the beef broth whilst continuously stirring until you have a nice smooth sauce. If it needs more broth, keep adding until the right consistency. Then add the Worcestershire sauce, season with salt and pepper and give it one final stir.
Step 8
If you want the gravy super smooth, you can strain it through a sieve.
Step 9
Take the fries out of the fridge and get a deep sauce pan on a high heat. Add the oil and once it comes up to 180c/350f drop in the fries. Fry for a few minutes until golden brown.
Step 10
Add the fries to a bowl, season with salt and add the cheese curds. Mix well.
Step 11
Place in a bowl with more cheese curds on top, pour over the gravy and garnish with chives (optional).
