Step 1
Preheat the oven to 180°C/160°C fan.

Step 2
Whisk the eggs in a large bowl until combined. Add the flour and mix well.
Step 3
Add both cheeses, courgettes, spring onions, oil, and a pinch of salt and pepper. Stir to combine.
Step 4
Line a medium or large oven-proof dish with baking paper and pour in the egg mix.
Step 5
Bake for 25-30mins and then check for a slight wobble in the centre (return to the oven for another 5-10mins if not). It will continue to cook and firm up as it cools, after you take it out of the oven. The top should be lightly browned. ߪ. Serve with a side salad for added crunch. Store in an airtight container and consume within a week
