Step 1
Heat oven to 300 F . Spray 9-inch springform pan with cooking spray. Stir all crust ingredients in a medium size bowl until blended. Press firmly into bottom of pan.
Step 2
Beat cream cheese in large size bowl on LOW just until smooth. Add sugar; beat on LOW just until blended. Add lemon juice, vanilla and one egg; beat on LOW just until blended. Add remaining eggs, one at a time, beating on LOW just until blended and scraping bowl after each.
Step 3
Pour filling into crust-lined pan. Bake 1 hour 15 minutes or until edges are puffed and center is almost set. Center may appear sunken and will even out when cooling. Cool completely on wire rack. Cover; refrigerate at least 4 hours. Serve with desired topping, such as fresh fruit or a drizzle of caramel sauce. Store leftovers in refrigerator.
