Quick No Knead Multi-Seed Bread
This is no-knead multi-seed bread with no yeast. It is perfect for breakfast toast, a side for soup, or as sandwich bread. Mix all with a spoon or pastry spatula and bake. Please feel free to supplement with what you have in hand.

Ingredients

1 ¼ cupall purpose flour
¾ cuprye flour
½ cupsunflower seeds
toasted
½ cuppumpkin seeds
toasted
1 Tbspsesame seeds
1 Tbspchia seeds
1 Tbspoat bran
or wheat bran
1 tspbaking powder
½ tspbaking soda
½ tspsalt
1 ¼ cupbuttermilk
room temperature, how to make buttermilk supplement- 1 Tbsp vinegar plus enough milk to measure 1 cup
1egg
large, room temperature
¼ cupoil
¼ cuphoney
or any choice of your sweeten syrup like maple or agave syrup
Instructions
Step 1
Preheat oven at 350ºF (175ºC) and butter and line a 5x9 inch (13x23 cm) or 4.4x10 inch (11x25 cm) loaf pan with a parchment paper. Set aside.

Mix dry ingredients into a bowl, mix well with a spoon and set aside.

Mix all wet ingredients in another bowl and whisk everything together

Mix wet and dry ingredient-mixture together. Whisk well until well combined

Pour the batter into the loaf pan and spread evenly. If you like, sprinkle your choice of topping seeds such as 1 tbsp sesame seeds,1 tbsp toasted sunflower seeds, 1 tbsp toasted pumpkin seeds and anything else you want
Step 7
Bake on a mid rack for 35-45 minutes or until golden brown and a skewer inserted in the center comes out clean.
Step 8
Remove from the pan and leave to cool completely on a rack before slicing
Step 9
Enjoy your multi-seed bread with butter, honey, avocado slices, pesto, hummus, and whatever you like!
