Cauliflower Rice

Cauliflower is the perfect alternative to rice. It's really easy to make and works with many different recipes. Try it with curry, stew or as a simple side dish.

Instructions

Step 1
Remove the cauliflower leaves and break up the cauliflower into smaller florets.
Step 2
Using either a grater or a food processor, grate the cauliflower. If you are using a grater use the larger holes and grate until it resembles rice. If you are using a food processor only pulse until the cauliflower resembles small grains of rice - if you pulse it for too long it will go mushy and turn into a puree.
Step 3
Pat dry with some kitchen paper to reduce some of the moisture.
Step 4
Season the raw cauliflower rice and lightly fry for about 5 minutes. Alternatively, it can be microwaved in a bowl with pierced cling film for about 5 on high.
Step 5
Optionally stir in some fresh cropped coriander.
