Ingredients

41 ouncesboneless skinless chicken breasts
2 cupsfat-free low sodium chicken broth
1Can Red Enchilada Sauce
1 x 14 ouncescan fire-roasted diced tomatoes
with juice 1 ounces, can dice green chilies
1 ¾ cupsRotel
1clove garlic
minced
1 cupgreen spring onion
peeled and diced
1 tspground cumin
½ tspsalt
6 ounceslow-fat cheddar cheese
Instructions
Step 1
Add all ingredients in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
Step 2
You can also throw this is a stockpot for 20 minutes but would need to grill or bake the chicken first.
Step 3
Garnish with 1 ounce of cheese per serving.
