250gspelt flour

2 teaspoonsbaking powder

½ teaspoonbaking soda

¼ teaspoonsalt

½ cupcocoa

½ cupapple sauce
or 2

250gsugar

250mlmilk

2 teaspoonsvanilla extract

½ cupcoconut oil
melted
GANACHE
Instructions
BATTER
Step 1
Preheat oven to 180c and prep a round cake pan (22 x 24 cm)

combine dry ingredients

blitz wet ingredients

Step 4
when the mixture is even, combine dry and wet mixtures


Step 5
Pour the mixture into the oiled baking tray and bake for 30-35 minutes, until the cake gets stable.
GANACHE
Step 6
Melt dark chocolate, add pinch of salt and vanilla extract


Step 7
When melting starts, set off the heat and add a bit of tahini while stirring. Put back on the stove and leave to melt completely. Put off the stove and mix in the rest of the tahini to reach a creamy shiny ganache texture. Balance taste with date syrup.
Step 8
When the cake is baked, put it out of the oven and set to cool for 15 minutes. Pour ganache over and set at room temperature.
