Instructions

Step 1
Heat a nonstick griddle on medium-high heat.
Step 2
Rub fillet with salt and pepper.
Step 3
Coat griddle with cooking spray.
Step 4
Grill fillet until done. Test if it flakes easily using fork.

Meanwhile, heat oil in a non stick pan over medium heat.

Saute onion until soft.
Step 7
Put garlic, oregano and tomatoes. Let it boil.
Step 8
Turn heat low. Simmer for 6 minutes. Stir.
Step 9
Add olives and capers. Cook for another minute.
Step 10
Spoon tomato sauce over fillet.
Step 11
Garnish with chopped parsley. Serve quickly.
