Instructions

Step 1
Set IP to sauté. Cook onion in oil until translucent.
Step 2
Add a little broth to deglase the bottom of the pot Add spinach, artichokes, and garlic. Cook until spinach has thawed.
Step 3
Add rice and the rest of the broth. Make sure to scrape any rice off the sides of the pot. Close the lid on non-venting and cook on high pressure for 6 minutes.
Step 4
Once done, do a quick release and stir well. If you are not vegan, now is the time to fold in any cheese.
Step 5
Serve hot and enjoy!
