San Sebastián Cheesecake

You all have to try this super creamy cheesecake with a caramelized “burnt” top. It originated in San Sebastián, but in Turkey they serve it with melted chocolate!

Step 1
Start by creaming your cream cheese, sugar, and vanilla. Add the eggs, followed by the flour and heavy cream.
Step 2
Pour the mixture through a sieve into a parchment lined 6inch pan. Let the mixture rest for at least 10 minutes, and preheat your oven to 500f in the meantime.
Step 3
Tap the pan on the counter to get rid of air bubbles and place in the oven to bake for 25-30min. Ovens are different, and your cheesecake will be done when it’s completely browned on top but the center is still a bit jiggly. Turn off the oven and open the door, but leave the cheesecake in there to avoid cracks.
Step 4
Once the cheesecake has cooled to room temperature, refrigerate for at least 4 hours.
Step 5
You can eat it as is (I lowkey prefer no chocolate), or you can pour melted chocolate on top like they do in Turkey. Enjoy!
