On a clean surface, add flour flour and use your fingers to create room in the middle for the eggs.

Crack the eggs into the middle of your flour wheel and beat them with a fork, at first trying not to touch the flour. When the eggs are beaten properly, add the flour little by little from the inside of the wall.

Once your mixture is not sticky anymore you can start kneading with your hands.

Knead for 10 minutes until you form a smooth dough and cover with plastic wrap.

Rest at room temperature for 30 minutes.

Flour your clean surface and start rolling out your dough with a rolling pin. Turn the dough often to keep a circular shape.

One thing you can do to roll out your pasta perfectly is to let half of it hang from the side of the table (gravity will help your dough to stretch). If the dough feels too sticky, add flour as needed.

Once the pasta sheet is thin, roll up your pasta sheet from either ends until they meet in the middle and cut it into stripes of 4mm (0.2 inches). You have just made some fresh FETTUCCINE!

Boil your fettuccine in some salted water for 5 mins.

In the meanwhile, let’s make a classic Italian Alfredo sauce so start putting your butter in the freezer for 10 mins. Very cold butter will make the pasta super creamy!

Pour your boiled fettuccine in a shallow dish or a cold pan (no heat), add your cold butter and the Parmigiano cheese little by little.

Stir for at least a couple of minutes and add a couple of spoons of pasta water to make it super creamy. Buon appetito!
