Baked Penne with Spinach & Cheese

Instructions

Step 1
Preheat the oven to 375°F.
Step 2
Butter a 9-by-13-inch baking dish.
Step 3
Fill a large pot three-fourths full of water.
Step 4
Set the pot over high heat and bring the water to a boil.
Step 5
Add 1 tablespoon salt and the pasta adr well, and cook the pasta according to the package directions until dente (tender but still firm at the center).

Drain in a colander setine sink, transfer the pasta to a bowl and set aside.
Step 7
Return the color the sink.
Step 8
Add the butter to a large frying pan.
Step 9
Set the pan over met.
Step 10
When the butter has melted, add the spinach in 2 or 3 batches in intil slightly wilted before adding the next batch.

Stir in a pand cook until the spinach is completely wilted.

Drain the machi the colander and press down on it with a rubber spatulate poove 1 much liquid as possible.

Transfer the spinach to a cutting board and sely chop.
Step 14
In a large bowl, stir the feta, sour cream, yogurt, and spital well combined.
Step 15
Add the pasta and stir until evenly coated.
Step 16
Pour cxture into the prepared baking dish, spread into an even layer, and sprinkle the mozzarella evenly over the top.
Step 17
Bake until hot and bubbly, about 30 minutes.
Step 18
Remove the baking dish from the oven.
Step 19
Serve right away.
