Step 1
Add a splash of olive oil to a pan and let it get hot. Slice the shallot and cook it. Place the minced garlic on the pan and let it cook until fragrant

Once the garlic is cooked, add the spinach and cook it until wilted down. Season it with salt and black pepper.

Drain the excess water from the pan and add the ricotta cheese. Stir it until combined and set aside.

Meanwhile cook your gnocchi in hot water and pre-heat the oven to 200ºC.

Once it's cooked it's time to start assembling your baking dish: place a layer of gnocchi at the bottom. Add the spinach/ricotta filing and then another layer of gnocchi. Top it with shreaded mozzarella cheese, dried provençal herbs and dried oregano.

Leave the dish in the oven for 20 minutes or until the cheese is golden brown. Once the cooking is finished, top the dish with black olives and serve it right away.
