Spinach Artichoke Lasagna

Instructions

For the Filling

Step 1
Melt the butter in a large pan over medium heat.
Step 2
Add as much spinach as will fit in the pan and cook just until it wilts. Continue adding handfuls of spinach to the pan until it's all wilted and immediately remove the spinach from the pan.
Step 3
Season with salt and pepper to taste then let the spinach cool.
Step 4
While the spinach cools, sauté your onion in a pan until translucent.
Step 5
Then add the zucchini, artichoke hearts and garlic to the pan and cook down for about 5 minutes.
Step 6
Then season the veggies with salt, pepper and Italian seasoning. Set to this mixture to the side.
Step 7
Once the spinach cools, squeeze the excess liquid out.
Step 8
Place the spinach, ricotta, eggs, Parmesan, shredded mozzarella, salt and pepper to a large bowl. Stir to combine.

For the Assembly

Step 9
Spread a layer of marinara sauce on the bottom of your baking dish.
Step 10
Then layer: lasagna noodles, ricotta mixture, zucchini mixture, noodles, marinara. Repeat until you run out of ingredients.
Step 11
Finish the lasagna off with a layer of fresh mozzarella.
Step 12
Cover with tinfoil then bake at 375 for 45 minutes.
Step 13
Remove the tinfoil, then bake for 10-15 more minutes or until the mozzarella is nice and bubbly.
Step 14
Let the lasagna cool for at least 10 minutes before digging in!
