Instructions
Step 1
Preheat the oven to 400 F or preheat a grill to medium-high heat. Season the chicken pieces with the salt, pepper, garlic powder, and onion powder. Set aside.
Step 2
On a piece of heavy-duty foil, scoop 1/2 cup of the cooked rice. Top rice with 1 tablespoon of the butter. Add about 1/2 cup of the chicken. Top with 2/3 cup of the broccoli, 1/3 cup of the cheese, and about 3 tablespoons of the bacon.
Step 3
Bring up the sides of the foil and close up at the top. Make sure to leave room for heat circulation inside and a little opening at the top for steam to release. (Freezing instructions begin here.)
Step 4
If baking, place the foil packs in a single layer on a baking sheet. If grilling, place directly on the grill. Bake or grill for 20-25 minutes, or until a thermometer inserted in the chicken registers 165 F and the juices run clear.
Step 5
Remove the foil packs from the heat and let stand for 5-7 minutes. Carefully open each pack to release the steam.
Freezer Meal Instructions
Step 6
To freeze: follow the directions through step 3, but do not cook. Instead, close up the foil packs tightly and place them in a large freezer bag or container and freeze.
Step 7
To prepare from frozen: let pack(s) thaw in the refrigerator for 24 hours. Open each foil pack a little at the top (to allow the steam to release when it cooks). Cook as directed, adding another 5-10 minutes to the cooking time.
