Cinnamon Bites
5 steps
Prep:2hCook:35min
It’s cinnamon rolls, but easier to make and in bite size!
The dough is soft and fluffy, and is made with brown butter/toasted milk powder and spices for an elevated flavor. The rolls are baked with a classic cinnamon-sugar topping, and then drizzled with a buttery glaze!

Instructions
Step 1
Combine your butter, milk, sour cream, egg, vanilla, sugar, and spices. Pop in the microwave for a minute to warm up the mixture so that the yeast activates.
Step 2
Add your flour, instant yeast, and toasted milk powder if using (highly recommend). Knead using a stand mixer, or by hand, for 8-10min or until the dough is tacky to touch. Keep in mind that this is an enriched wet dough so only add flour if it’s really sticky, otherwise oil your hands to work it. Let the dough rest in a warm place until doubled in size (1-2 hours).
Step 3
Once your dough has risen, punch it down and divide into 32 balls. Butter your baking pan and pour enough heavy cream to cover the bottom. Place the rolls in the pan and leave a bit of space between them as they still need to rise for a second time for 30 minutes. Preheat your oven to 350f in the meantime.

Step 4
Combine melted butter, brown sugar, and cinnamon in a bowl, and mix well. Spread this mixture generously on top of your rolls. Bake for 35-40min, and once it comes out, let it completely cool down.
Step 5
Make your glaze by combing the brown butter, powdered sugar, vanilla, and 1 tbsp of heavy cream at a time to thin out the glaze to your liking. Pour on top of the cinnamon bites, and enjoy!
