Instructions
Step 1
In a medium bowl combine the yogurt and cinnamon, stirring until incorporated.
Step 2
Heat the butter in a medium skillet, when melted add the apricots to toss and coat.
Step 3
Add in the sugar, stir, and reduce the heat to medium low.
Step 4
Allow to cook until the apricots begin to caramelize and plump up, about 6-8 minutes.
Step 5
In the meantime divide the yogurt into 4 serving glasses.
Step 6
When the apricots are ready, deglaze pan with the orange juice.
Step 7
When the liquid is almost thickened, alloiw it to simmer, uncovered, on low heat unttil it is evaporated, 5 to 9 minutes.
Step 8
Divide the apricot mixture on top of the yogurt in the serving glasses. Top with 1 teaspoon nuts each.
Step 9
Drizzle with 1/2 teaspoon of honey each and serve.
