Half Baked Macaroni and Cheese

Instructions

Step 1
Bake a potato the day before or two hours before. Peel and roughly chop. Set aside.
Step 2
Cook bacon in microwave, oven or skillet. Cool and crumble bacon. Set aside.
Step 3
Season chicken tenders with salt and pepper. Heat olive oil in skillet and cook chicken tenders until cook through. Cut into bite size pieces. Or cut up part of a rotisserie chicken.
Step 4
Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
Step 5
Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Colby jack cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
Step 6
Fold macaroni into cheese sauce until coated.
Step 7
Fold in sour cream, chicken, bacon, chives and baked potato.
