Apple Crisp

This delicious, caramely fall dessert is one of my absolute favorites!! It will brighten any household during the holidays and it’s incredibly easy. It’s perfect for big groups and it’s so easy to double, triple, or quadruple the recipe.

Instructions

Caramel

Step 1
IF YOU PREFER - you can also just buy caramel at the store. My favorite is Ghiradelli’s sea salt caramel!
Step 2
Add the granulated sugar and 1/4 cup water to a saucepan and stir together. Add the butter and set it over medium-high heat, but do NOT stir it. Cook, still without stirring, until the butter and sugar have completely melted and started to bubble, normally about 4-5 minutes.
Step 3
When the mixture begins to brown around the edges, carefully start to stir it occasionally with a spatula. Stir until it becomes a deep golden brown and starts to smoke slightly, again about 4-5 minutes. DO NOT EVER walk away from the caramel, it will go from perfect to burnt in seconds.
Step 4
When the caramel turns that deep golden brown, remove the pan from the heat and whisk in the heavy cream. The caramel will expand and sputter before it gets smooth and silky.
Step 5
Stir in the vanilla and salt. If the caramel isn’t completely smooth, put the pan back on low heat and whisk until smooth. Yields about 2 cups. Carefully pour the caramel into a heat-safe container to cool.

Apple Filling

Set your oven to 350 degrees.
Step 7
Peel, clean, and cut the apples. You can slice them into thin slices or chop them, I prefer chopped. Make sure to cut out any bruises. Place your prepared apples in a large bowl.
Step 8
Pour in lemon juice and mix. Add spices and salt and mix well until it evenly covers all of the apple pieces. Pour in at least 1/2 cup of the caramel and stir it in (I honestly eyeball it)
Step 9
Pour the apple filling into a 10” cast iron skillet or baking pan (9x13 or 9x9) of choice. The deeper the pan, the longer the baking time. Make sure to pour all of the juices in too! Set aside.
Step 10
Do not clean out the bowl after it is emptied, you will use it for the crumble topping as well and want any of the leftover juices for your topping!

Crumble Topping

Step 11
In that same bowl, mix the flour, oats, salt, and any fall spices you love (I sprinkle some nutmeg and cardamom in mine). Mix well with a spoon.
Step 12
Add your softened butter and mix. I recommend using your hands, it’s easier to combine the dry and wet ingredients and gives you more of a crumble texture than a powdery or super separated mixture. As soon as you start seeing the butter clump the ingredients together, stop mixing. You don’t want it to be like a dough!
Step 13
Sprinkle the topping evenly over the apple filling.
Step 14
Bake in the oven for 40-50 minutes. As soon as the top is golden brown and the juices are bubbling up, take it out.
Step 15
Drizzle with extra caramel! Serve hot with some vanilla ice cream. Enjoy!
