Step 1
In a small bowl, beat the cream cheese with a fork until it is smooth.
Step 2
Add in the caster sugar, egg, and vanilla essence. Beat until fully combined. Set aside.

In a medium sized saucepan, add the butter and chocolate until melted and smooth.
Step 4
Take the saucepan off the heat and immediately whisk in the caster sugar.
Step 5
Whisk in the eggs until very well combined.
Step 6
Add in the cocoa powder, vanilla essence, and food coloring. Whisk until combined.
Step 7
Add in the flour and salt. Fold with a rubber spatula until just no flour streaks remain.
Step 8
Pour the brownie batter into your prepared pan. Top with the cheesecake mixture and swirl around with a knife.
Step 9
Bake for 35-40 min, or until the brownies only slightly jiggle in the pan.
Step 10
Wait until the brownies cool down to room temperature to slice. Serve, and enjoy!
