Almond Milk Chocolate Pudding

This is a super easy pudding that can be adapted as needed to be both vegetarian or vegan. It is low-fat and a responsible snack for those watching their diet but seeking a sweet chocolate dessert. A very versatile pudding recipe that is easy to modify.

Instructions

Step 1
Mix sugar, cocoa powder, cornstarch, & salt together in saucepan; whisk in 1/4C almond milk until foamy & smooth. Continue adding almond milk (1/4C at a time) until mixture is smooth & foamy each time.
Step 2
Place saucepan over med.-high; cook (% min.), stirring constantly, until mixture simmers & begins to thicken.
Step 3
Remove saucepan from heat; stir in butter until melted & smooth. Add extract/rum, mixing well. Pour into serving bowl.
Step 4
Refrigerate (30 min. or longer) until chilled.

Garnish with chocolate sandwich cookies, chocolate chips (great when served warm), vanilla wafers, or graham crackers. (Line a casserole dish with chocolate wafer cookies or chocolate grahams & filling with pudding - banana pudding style!)

Chocolate -Banana Pudding: pour chocolate pudding over bananas

Chocolate-Mocha : Add 1-2 Tbsp instant coffee granules to dry mix (you may wish to increase sugar slightly)!
