This recipe is from a 1978 cookbook made to celebrate the Centennial anniversary of St. Augustine Church in Schuyler, Nebraska. It’s a compilation of recipes submitted by women of the church. This particular recipe was submitted by Mrs. Lambert Jonas and can be found on page 157. The recipe specifies Ritz brand crackers.

Dip pieces of chicken in salad oil, season with salt and pepper.

Roll in the crumbs until all sides are covered. Place pieces of chicken, side by side, in a large pan lined with foil. Pan should be large like a cookie sheet with small edges. Pieces of chicken should not be crowded.

Bake 40 minutes at 325° F and then about 30 minutes longer at 350° F, depending on the degree of brownness desired.
