Instructions
Step 1
Season the lamb shanks to the pan and brown on all sides put to one side, rub with plain flour
Step 2
In the same pan sauté the onion and garlic in the oil until soft, 2 minutes
Step 3
Add the stock, tomatoes veg and herbs and cook in the oven until lamb is cooked through and beginning to fall off the bone, this could take up to 3-4 hours at 160C
Step 4

20 mins before the end add a teaspoon of cornflour to hot water and mix until in solution add to the cook pot to thicken the sauce
Step 5

Serve with mash potato and fresh veg
