Step 1
1. Preheat oven to 425°F. Mince scallions, separate whites & greens.
Step 2
2. In a small pot combine rice, 3/4 cup water, and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer, 15-18 mins.
Step 3
3. In a large bowl, combine beef, panko, scallion whites, ginger, soy sauce, siracha, salt, and pepper. Form into 10-12 1/2-inch meatballs.
Step 4
4. Place meatballs on one side of a lightly oiled baking sheet. Toss green beans on other side w/ oil, salt, and pepper. Roast on top rack 14-16 mins.
Step 5
5. Top everything with scallion greens and chili flakes.
