Step 1
Shake 35ml gin, 10 minte leaves, 20ml sugar syrup, 20ml lemon juice and 2 dashes raspberry vinegar (muddle 15g raspberries with 100ml apple cider vinegar, leave in a fridge for 48 hours and strain). Double-strain over ice into a copa. Top up with The London Essence Co. Original Indian Tonic Water. Garnish with mint.
