Step 1
Preheat oven to 350°F. Line a 13 x 9-inch baking pan with foil, extending foil over edges. For crust, in a large bowl stir together 2 cups of flour and the powdered sugar; add butter. Beat with a mixer on low to medium just until mixture begins to cling together. Press into prepared baking pan. Bake about 25 minutes or until light brown.
Step 2
Meanwhile, remove 1 tbsp. zest and 1/3 cup juice from lemons. In a medium bowl whisk together eggs, granulated sugar, and lemon juice. Whisk in remaining 1/4 cup flour and zest. Pour over hot crust.
Step 3
Bake about 20 minutes or until edges begin to brown and center is set. Cool in pan on a wire rack. Use foil to lift uncut bars out of pan; cut into bars. Just before serving, sprinkle with additional powdered sugar.
