Fish
Lime chilli butter
Instructions
Step 1
Dust the fish with the flour and season on both sides.
Step 2
Heat a large pan (I used my non stick roaster) and add 1tbsp butter and oil..
Step 3
Add the fish to the pan and sear for 2 minutes.
Step 4
Turn over and put the pan in the oven at 180 for 7 minutes. Alternatively, leave on the hob on a moderate heat and turn every two minutes.
Step 5
Meanwhile, make the lime chilli butter by melting the butter in a pan, add the chilli and the lime juice and zest and bubble for a minute. Pour the butter over the top of the fish and serve
