Instructions

Step 1
1. Pour the water into the instant pot and insert the steam trivet.
Step 2
2. In a small bowl, combine sea salt, chili powder and cumin. Season the salmon with the spice mixture, rubbing it onto the fillets. Place salmon, skin side down, on the trivet.

3. Secure lid with steam vent in sealed position. Select manual or steam, and adjust time to 4 minutes. (If salmon is thicker than 1", add an additional 1 minute per 1/2".)

4. Meanwhile, make the chipotle lime vinaigrette. In blender, combine lime juice, vinegar, oil, chipotle pepper, adobo sauce, cilantro and 1/2 tsp salt. Blend until smooth. Set aside.

5. When salmon is finished cooking, use quick release. Serve with a bed of rice and lightly pour vinaigrette on top.
