Instructions
Step 1
Peel the cucumber into ribbons leaving the soft core.
Step 2
Dress with 2 tbsp white wine vinegar and 1 tbsp water.
Step 3
Add a little lemon peel and mix. Leave for a few minutes to lightly pickle.
Step 4
Simply microwave the potatoes for 5 minutes and make the dressing.
Step 5
Mix 4 tbsp kefir with a large handful of chopped basil and one finely sliced spring onion. Season with salt and lemon zest.
Step 6
As soon as the potatoes are cooked, carefully toss them into the dressing so everything warms through the residual heat.
Step 7
To serve, drain the cucumber ribbons, spoon onto the plate with potato salad and a hot smoked salmon fillet.
