Instructions

Shortbread

Step 1
Place flour into a bowl, rub in margarine then add sugar. Stir in beaten egg.
Step 2
Press into 20cm round tin. Sprinkle with a little extra sugar and bake at 170ºC for 30 minutes.

Filling

Step 3
Beat together butter, icing sugar and boiling water. Add a little milk until light and fluffy. Stir in pulp of passionfruit.
Step 4
Split cold shortcake in half and fill.
