Instructions

Step 1
Preheat oven to 180°C & Grease a baking dish.

Cook spinach in a large saucepan of boiling water for 30 seconds or until wilted. Drain and set aside to cool a bit.
Step 3
Meanwhile, place potato, onion, garlic, oregano and (1/2 cup) grated cheese in a large bowl, Season & toss until well combined.
Step 4
Once cooled, squeeze any excess liquid from the spinach. Arrange half the potato mixture over the base of the prepared dish. Top with half the spinach, pour over half the cream. Repeat with remaining potato mixture and cream. Cover baking dish with foil. Bake for 50 minutes or until potato is just tender.
Step 5
Top potato bake with remaining spinach, remaining grated cheese and parmesan. Bake, uncovered, for 20 minutes or until cheese is golden. Set aside for 10 minutes to cool slightly, sprinkle the parsley before serving.
