Instructions
Step 1
With a hand blender in a tall smooth sided container, blend red wine, mustard and garlic until mostly smooth paste forms
Step 2
Add the mayo and blend more until very smooth paste forms
Step 3
Very slowly, with hand blender running constantly, pour the oil into the container. If oil builds up on edges or top, stop pour and blend in with handblender before adding more oil. This takes about 10 minutes
Step 4
Squeeze in lemon juice and stir with spoon. Can be served right out of container
Step 5
prepare romaine how you like served (I like to cut into squares with a sharp knife.) Dress only as much lettuce as your likely to use. Top with croutons and parmesian.
