Randomly stumbled upon this dressing recipe when searching the internet for a good greek salad dressing. It got rave reviews. I have now tested the dressing recipe multiple times and agree that it is very yummy, very easy, and made my homemade salad totally taste like I was eating a restaurant salad. Hooray for no more sucky salads! The rest of the ingredient list is my take on a hearty Mediterranean salad, and the dressing is versatile enough that you can take this in a greek direction with feta and chicken, an italian direction with salami and shaved parm, or go with loads of veg and it's so tasty you won't even miss the meat/cheese! According to the reviews, it can also be used as a marinade for meat or as the dressing for a pasta salad as well, or whatever you can dream up!
...PS, The person that originally posted the dressing recipe commandeered it straight from her place of employment (a pizzeria - people apparently ask all the time if they sell this dressing) and the original measurements produce approximately a gallon of dressing(!). Fortunately, some nice person in the comments section calculated the scaled down measurements to just 10 servings instead of 120. :D Enjoy!

½ clemon juice
2 tspgarlic powder
2 tspdried oregano
2 tspdried basil
1 ½ tsponion powder
2 tspdijon mustard
1 ½ tspblack pepper

Salad
2 headsRomaine lettuce
or desired salad mix
2green pepper
1" slices
0.5red onion
thinly sliced
1.5 ptcherry tomato
halved, or in-season whole tomato chunks
2cucumber
1/2" slices, quartered
6 ozkalamata olives
pitted
pepperoncini
thinly sliced
1can artichoke hearts
quartered
8 ozfeta cheese
chunks or crumbles, OR shaved parmesan
salami
sliced or cubed, OR grilled chicken OR chickpeas
Instructions
Step 1
Mix all dressing ingredients. Add add'l salt and pepper to taste as needed. (You can use fresh garlic and herbs for more punch if you like, but will need to adjust quantities - x(3) is typical conversion from dried to fresh for herbs. Be careful with fresh garlic, as it can add a sharp/metallic flavor in high quantities; you could substitute roasted garlic cloves at they typical conversion for a smoother garlic flavor.)
Step 2
Choose any combination of toppings of your choosing to accompany lettuce and prep all salad ingredients. Omit dairy, meat, nightshades, alliums, etc., as needed to meet various diet restrictions.
Step 3
Toss dressing with salad and serve!
