Instructions
Step 1
In a flameproof casserole dish heat the oil over a medium heat and brown the sausages, turning them occasionally until they are a nice golden brown colour on all sides – this will take 7-8 minutes
Step 2
Fry off some onion, garlic, diced celery and carrots. Add some bacon and/or belly pork and fry for a few mins,
Step 3
Add a table spoon of plane flour and cook for 1 min
Step 4
Add a good glass or two of red wine (Rhone is best) and boil off the alcohol.
Step 5
Add lentils and stock and bring to boil. Add sausages and simmer over a low heat for about 1hr.
