Instructions

Step 1
Preheat oven to 400° F. In a large mixing bowl, whisk together dry ingredients (except sugar.) In a separate bowl whisk together brown sugar and eggs. Then whisk in all other wet ingredients. Fold dry ingredients into wet until just combined. In a separate small bowl, mash all streusel topping ingredients with a fork until crumbly. Grease muffin tin or use muffin liners. Fill each muffin cup evenly with batter. Sprinkle streusel over the top of each. Place muffins in the oven and immediately reduce heat to 350°. Bake for approximately 30 minutes or until set. Let cool for at least 20-30 min.
