Instructions

Step 1
Preheat the oven to 350.
Step 2
Grate the carrots, zucchini, and apple and place between 2 paper towels. Everything except the apple needs to be dry.
Step 3
Grate the fresh ginger.
Step 4
Plump the dried blueberries in a small bowl with hot water.
Step 5
Put all of the dry ingredients in a big bowl and whisk together.
Step 6
In a small bowl add all of the wet Ingredients and whisk together. Add in the ginger.
Step 7
Make a well in the dry ingredients and add in the wet and mix until combined. This is a drier batter.
Step 8
Add in all of the grated ingredients, the coconut, and the almonds.
Step 9
Drain the blueberries and fold them in.
Step 10
Add all of the topping ingredients in a small bowl.
Step 11
Put the muffin batter into 20 muffin papers. Sprinkle on the topping and bake for 30-35 minutes.
