Instructions
Step 1
In a large pot over medium heat, melt your butter and saute onions until translucent. Add your garlic and cook for another 2 minutes. Salt as you go. Deglaze with white wine and reduce until almost dried.
Step 2
Add cauliflower, cream, thyme, and bay leaf. Cover and bring to a simmer. Cook until the cauliflower is tender. Uncover and simmer to reduce the liquid, around 20 minutes.
Step 3
Using a blender, blend the cauliflower, add liquid just to blend and 3 tbsp cold butter. The butter should be cold to allow for optimal emulsification. Season with salt and pepper.
Step 4
Run through a fine mesh strainer to make perfectly smooth.
Step 5
If you want it thicker you can return to the pot and simmer to reduce further. Finish with butter and plate up.
