Ingredients
4 servings
0.5 kilogrambaby potatoes
i chose baby red and baby creams
1red onion
finely chopped
¼ cuproasted red peppers
from a jar, preferably in oil
½ cupartichoke hearts
sliced
⅓ cupblack olives
¼ cupvegetable stock
or vegan chicken-style stock
½ teaspoonsmoked paprika
1 teaspoondried oregano
¼ cupolive oil
good quality
sea salt
black pepper
parsley
finely chopped
Instructions
Step 1
Put a large pot of water on a medium heat.
Step 2
Cut the potatoes in to halves.
Step 3
Cook the potatoes for 10 minutes and strain.
Step 4
In a heavy-bottomed pan, heat the olive oil on low.
Step 5
Add the onion and cook for 1 minute.
Step 6
Add the paprika and oregano and stir.
Step 7
Place the potatoes, cut side down, in the pan.
Step 8
Season the potatoes with sea salt and black pepper
Step 9
Sprinkle the sliced peppers over the potato and then the artichoke hearts.
Step 10
Add the olives.
Step 11
Pour in the stock and continue to cook on low for 20 minutes.
Step 12
The dish is ready when the potatoes can be pierced with a fork but still hold their shape. Sprinkle with fresh parsley to serve.
