I’m not much of a photographer but you can tell what the Brookies look like. I made these when planning to make brownie swirl cookies but it didn’t go to plan so I improvised. These taste good when fresh but the cookie part is more noticeable when fully cooled. I made these today and half the tray is gone! I recommend these if your family favourite is brownies and cookies.

For the brownies
5 tablespoonsunsalted butter
½ cupscaster sugar
¼ cupunsweetened cocoa powder

½ teaspoonsalt
½ teaspoonbaking powder
½ teaspoonpure vanilla extract

¼ cupall-purpose flour
¼ cupchocolate chips
optional
¼ cupwalnuts
chopped, optional
For the cookie dough
Instructions
For the brownie mix
Step 1
Position your oven rack in the lower third of your oven.
Step 2
Preheat oven to 325ºF/ 160º fan/Gas mark 4

Line a 8-inch square pan with parchment or alumni paper. Spray lightly with non-stick cooking spray.
Step 4
Combine butter, sugar, cocoa powder and salt in a large bowl, preferably glass, and place bowl over a pan of water that is just barely simmering. Stir occasionally until butter is melted and mixture is combined.
Step 5
Remove from heat and allow to cool for 5-10 minutes. You do not want the mixture too hot when you add the eggs.
Step 6
After mixture has cooled slightly, add vanilla and mix well.
Step 7
Add eggs, one at a time, and beat vigorously until very well mixed.
Step 8
In a separate bowl combine flour and baking powder, and stir to combine.
Step 9
Add flour mixture to batter, and mix very well to combine. While we are often told not to over mix brownies, this batter needs to be stirred vigorously. Stirring about 40 strokes with a spoon is a good guide.
Step 10
If adding chocolate chips and or nuts, fold them into the batter.
For the cookie dough (separate bowl)

Melt the butter and leave to cool a little

Put in another bowl with the sugars and mix until combined (spatula or whisk works) then add vanilla extract and egg.

In a separate bowl mix flour and baking powder then add to the mixture

Get your brownie mix and layer the bottom of the tray (make sure the bottom of the tray is completely covered)
Step 15
Put the cookie dough on top and smooth it out with a spatula
Step 16
Bake for 20-25 minutes or until a knife/ any utensil comes out clean
Step 17
Cool for about 10 minutes then serve!
