Instructions

Step 1
Preheat the oven to 200 C / 180 C fan / Gas 6 and grease a roasting tin with extra butter

Put the potatoes into a saucepan of salted water and bring to the boil. Boil for 15-18 minutes or until just tender, then drain and tip into the prepared roasting tin so they lie in a single layer.
Step 3
Crush the potatoes using a fork to squash them roughly. Mix the garlic with the melted butter and pour over the potatoes, tossing to coat. Season with salt and pepper and sprinkle with the Parmesan.
Step 4
Roast in the oven for 30 minutes or until golden and crisp. Serve immediately.
