Instructions
Step 1
Mix the carrots, spring onion, spices, coriander, flour, whisked eggs and salt.
Step 2
Heat 1 tbsp oil over medium heat. Use a dessert spoon to scoop the mixture into balls and place into the pan. Push down with the spoon to flatten the balls.
Step 3
Fry until golden, 2-3 minutes on each side.
Step 4
Place fritters on a plate with paper towel to absorb the excess oil.
Step 5
Serve and garnish with desired herbs.
