Instructions

Step 1
Start by combining your toffee ingredients, but only half of the heavy cream, in a pot. Whisk over medium low heat for about 30-40 minutes, or until mixture is thick and dark. Take it off the heat, and add the rest of the heavy cream. It will bubble but continue to whisk until mixture is smooth. Set aside to cool at room temperature.
Step 2
While the toffee is simmering, make the cake. Cream the butter, brown sugar, and vanilla until it’s fluffy. Whisk in the egg, followed by the date paste. Sift in the flour, cornstarch, and leavening ingredients. Fold to combine and transfer to a 8x8 baking pan, or individual ramekins.
Step 3
Bake at 350f for about 25-30min, or until a skewer inserted in the middle comes out clean. Poke holes throughout the cake and pour a cup of the cooled toffee sauce on top. Serve it warm with ice cream and more toffee sauce, enjoy!
