Step 1
Wash and slice potatoes to just under 1/4 inch thick . Place them flat on a plate cover with plastic wrap then pierce with a toothpick to make lots of holes . Microwave for 5 minutes on full power . Do the rest of the potatoes in batches then let them cool down

In a bowl beat two eggs with salt and pepper then in another bowl add flour 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika salt and pepper and mix together . Dunk the potatoes into the egg tap off the excess then coat in the flour mixture . Put on a plate for frying

Step 3
Fry the potatoes in batches on medium heat until golden and crispy then drain off on paper towels
Step 4
Mix sour cream mayonnaise salt pepper 1/2 tsp garlic powder 1/2 tsp onion powder pickle juice and chopped chives in a bowl for dipping then dunk those crispy potatoes in and enjoy
