Step 1
Slice your eggplants to a thickness of 2mm.

In a bowl, add ground beef, 1 egg, parsley, salt and pepper and mix everything together.

Step 3
Spread 1 tablespoon of your meat mixture on each eggplant slice, add 1 piece of mozzarella cheese and roll it up.

Cover each roll with flour, eggs and breadcrumbs and fry in a lot of oil for 4/5 mins or until crispy. Buon appetito!
