Ingredients
2 servings
3 tablespoonsred wine vinegar
more to taste
¾ teaspoonsalt
more to taste
3 glovesgarlic
crushed well with the back of a knife
1 cancannellini beans
or cranberry, drained and rinsed
fresh basil
black pepper
to taste
extra-virgin olive oil
for serving, optional
2 sliceswhole-grain bread
rustic, or sourdough, for serving, optional
Instructions
Step 1
In a small bowl, combine the vinegar, salt, and garlic. Set aside for 10 - 15 mins while you prepare the rest of the salad.
Step 2
Halve the cherry tomatoes or quarter them if large, then place in a large serving bowl. Add the beans.
Step 3
Strain the vinegar mixture onto the tomatoes and beans. (Feel free to leave the garlic if you really like garlic though).
Step 4
Season to taste with black pepper and additional salt and vinegar, if desired. Tear or roughly chop the basil leaves, and sprinkle them throughout the salad.
Step 5
Serve on small places with an optional drizzle of olive oil alongside slices of bread.
