Ingredients

1 headcauliflower
chopped
1bell pepper
chopped
8jalapeno
serrano, sliced
1onion
chopped, or pear onion
1 stalkcelery
chopped
Carrots
About the same amount as the cauliflower, chopped
1 csalt
6cloves garlic
minced
2 TBoregano
2 tred pepper flakes
1 tblack pepper
1 colive oil
1 cvegetable oil
2 cwhite vinegar
olives
optional, chopped
Instructions
Step 1
Put all veggies and the cup of salt into a sealable container, cover with water and refrigerate overnight
Step 2
Drain water and rinse veggies. In a bowl mix together garlic, oregano, red pepper flakes, black pepper, olives (if using), vinegar and oils. Combine with vegetable mixture, cover, and refrigerate for 2 days mixing occasionally. Will last 3/4 weeks
